Ascoli Olives are one of the most famous gastronomic products of the Marche, typical of the territory of Ascoli Piceno which took its name. Their origin dates back to 1800 and was handed down until today. The centerpiece of the flavor of stuffed olives is the presence of the olive green called "the Tender Ascolana Olive (Olea europea sativa). This oil should be stoned and its interior is placed a mixture formed by using three types of meat, beef (mostly), pork, turkey or chicken, after being roasted with herbs such as celery, carrot and onion and should be beaten for obtain a smooth mixture. The mixture will be enriched by the presence of Parmesan cheese, nutmeg and eggs. Once filled olives of this mixture, one must pass all first in flour then breaded with breadcrumbs with the eggs. The stuffed olives are great to accompany a glass of wine and bring out the maximum of their taste, are served hot.
