Le virtù are a dish of Roman origin absorbed completely by Teramo tradition. This dish is served exclusively on occasion of May 1st, the day wherein many families of Teramo join themselves to prepare and to taste a dish so delicious. It is composed of many ingredients:, beans, beans, chickpeas, lentils, carrots, zucchini, potatoes, beets, endive, kale, lettuce, cauliflower, chicory, spinach, peas, fennel, cabbage, turnips, onions, herbs, ham, rind, dried pasta and egg, meat balls. It is a peasant food and it is conceived to free the cupboards by the leftovers of the winter and, in this way, the wintry products were united to fresh products and pastes each type. Its achievement is very complex because no ingredient must to emerge in order to achieve a perfect balance of ingredients. If we take a step back is easy to realize how this food represents the seasonal rhythms who belong to a rural lifestyle. Le virtù pay tribute to the tradition of Abruzzo.
