The Buccellato is the most typical sweet and known cake in Lucca, created by pastry chefs in the distant 1450 to delight the palates of the nobility in town. The Buccellato owes its name to 'Buccella' which in Latin means bite: the ancient Romans to the buccellatum was a round bread made up of a crown of sandwiches or buccellae. Even the modern Buccellato di Lucca, originally, had indeed a bun shape and always had on the tables of the Lucchese Sunday.
This is a very simple but sweet flavor: inside has a sweet and soft dough filled with raisins and ANACI while out and brush with a layer of sugar and egg, which guarantees the typical brown gloss. An adage says lucchese "Who is in Lucca, and not eat Buccellato is like if there he had never been", stressing the historical link of this sweet city with tradition.
