Hi Evelyn, according to the description you made, I think to Montecatini area, (town not big but rich of shops, restaurant, bars) or also Lucca area
Montecatini, is more lively in summer than Lucca i think, and it has many points of interest there like Grotta Giusti, a very comfortable spa, Collodi, where there is the park of  "Pinocchio", the very famous tale set in Tuscany, the pictoresque town of Montecatini Alto, with its typical restaurants and many other things. Lucca instead is bigger, more historical and with many cultural events in summer.
I would think also to Chianti area, wich is close to Florence, and very appreciated, and there are many villas with pools there,  but it isn't connected by train to Florence (just with bus), and there are not that many shops in the villages there.
